Fresh Caviar is a delight for the palate and consists of the roe collected from a few chosen fish. Caviar is segregated into two distinct types. The Sturgeon type, which is the best of all types, and the non Sturgeon type, which is more easily available and most affordable. Here are some of the most prominent varieties of caviar.
• Beluga Caviar: Considered the finest caviar, Beluga Caviar is collected from endangered the Blue Sturgeon fish. The quality is soft, clear as crystal with shiny gloss, and roughly about the shape of a pea, and can come in various colors. Like all good Caviars, it melts away on the tongue with a rich and creamy taste.
• Osetra Caviar: It is harvested from the Russian Sturgeon fish. The Caviar are about average in size and ranges from warm brown to green-gray in color, to dark blue to jet black or even white. It is considered a close second to Beluga Caviar. Ossetra caviar has a nutty flavour and is considered an elite caviar.
• Sevruga Caviar: Another sturgeon fish which gives small gray Caviar and possesses a strong rich tang.
• Sterlet Caviar: The last sturgeon fish which harvested golden eggs was known to grace the tables of the nobility and aristocracy. Due to over fishing this variety is almost extinct, so this type of Caviar is no longer available.
Caviar is also harvested from fish other than the Sturgeon. Though it lacks the same qualities and flavour, it does come close to it and is a lot less in cost as compared to the Sturgeon varieties.
• Lumpfish Caviar: Harvested from lumpfish and high in demand due to its lower cost. The Caviar is tiny and recognizable as they come in reddish black.
• American caviar: Harvested from the Mississippi Paddlefish which bears a close resemblance to the Sturgeon. This Caviar is small to average in size and is greyish in color.
• Whitefish Caviar: It is found in the Great Lakes belt and in most northern countries. This Caviar is small in size, colored yellow and has a mild taste, making it the most flexible Caviar of all.
• Salmon or Red Caviar: This caviar is medium in size with the color ranging from a fiery light orange to crimson in color. Salmon caviar is known to be the closest in flavour when compared to the Sturgeon counterparts.
• Tarama: Harvested from Carp and is orange in color. During its processing it is smoked rather like meat.
• Trout Caviar: Rainbow Trout has their roe shaded in orange and is smaller in shape. The taste is mild and curiously salt-free. Since it is mostly farmed and easily available it is cheaper in price.
